Corn Avocado Salsa

8 Servings (½ cup) 

  • Honey - 1 tbsp

  • Green Bell Pepper - 1 diced

  • Sea Salt - a pinch or ⅛ teaspoon

  • Avocado - 2 diced

  • Cilantro - 1 bunch

  • Cucumber - 1 diced

  • Sweet White Corn - 1 can drained and rinsed

  • Lime Juice - 4 tbsp or 2 limes juiced

  • Olive Oil - ¼ cup

Mix honey, olive oil, salt, and lime juice in a bowl. Add in diced cucumber, bell pepper, sweet corn, cilantro, and avocado, and gently stir.

Can be served with chips or used as a topping for tacos, fish, chicken etc. for a low carb high protein lifestyle.
